Blueberry Semifreddo

Impress your friends at your next dinner party with this semifreddo recipe. Even the name sounds fancy. Take it up a notch by using your best Super Mario voice when you tell your friends about the dish.

The base recipe is incredibly simple. Once you have your base of eggs, cream, and honey as a sweetener, you can add your own flavour. I added frozen blueberries and chopped up leftover Christmas chocolate.

If  you’re still not convinced how easy it is, I made a batch with a toddler hanging on my leg.

Ingredients:

1 large egg

4 egg yolks

1/2 cup honey

1 1/2 cup cream

1/2 cup blueberries

1/2 cup chopped chocolate

Directions:

Whisk the egg and egg yolks in a bowl over a pot of simmering water until the mixture is thick and a little frothy

Whip the cream by any means possible. You can whip the cream by hand or use a stand mixer. It won’t make you any less of a man.

Fold in the egg and honey mixture into the whipped cream

Add blueberries

Pour the mixture into individual ramekins or line a loaf pan with cling wrap and you’ll end up with a nice semifreddo log

Put it in the freezer overnight
